This Week's Recipe:
Chicken Breasts Dijon
Ingredients:
2 skinned and boned chicken breasts ( 4 halves)
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
2 tablespoons virgin olive oil, mixed with basil
1/2 cup onion, chopped
2 garlic cloves, chopped
1 cup chicken broth
4 tablespoons lemon juice
6 tablespoons dijon mustard
cooked wild rice
Directions:
Rub chicken breats with salt and pepper. Melt butter in a large skillet, add oil and chicken breats and cook over medium-low heat around 10 minutes or until browned. Combine onion and the next 5 ingredients and add to chicken breasts. Bring to a boil and then reduce heat. Simmer 15-20 minutes. Serve over wild rice!
