Houston's Grilled Chicken Salad

Lime Dressing:

1/2 cup lime juice

4 teaspoons honey mustard

7 1/2 tablespoons honey

4 tablespoons vegetable oil

2 garlic cloves, minced fine

1 teaspoon pepper

1/2 teaspoon salt

Peanut Sauce:

4 tablespoons Peanut butter

4 tablespoons soy sauce

4 tablespoons hot water

2 teaspoons sesame oil

1 tablespoon ground ginger

Mix ingredients for lime dressing, then mix ingredients for peanut sauce.  Salad ingredients for Houston's grilled chicken salad: mixed greens, carrots, thin tortilla strips, and grilled chicken breasts sliced in thin slices. Mix the salad ingredients with the lime dressing. Drizzle peanut sauce on top.

 

Applebee's Club House Grill Sandwich

2 thick slices of french bread

softened butter

mayonnaise

1/3 cup shredded cheddar cheese

2 slices deli turkey breast

2 slices deli ham

2 slices tomato

2 tsps. bullseye barbecue sauce

Butter one slice of bread and put butter side down into preheated skillet, on medium heat. Spread the up side of the slice with mayo. Sprinkle on half of cheese. Heat the turkey and ham slices in the same skillet for about 30 seconds. Lay the turkey on the cheese, then the tomato. Spread bbq sauce over tomato, then lay on the ham, sprinkle the rest of the cheese over ham.  Butter the second slice of bread on one side and put on top, with butter side up. The first bread slice should be brown, flip sandwich over and brown the second side for 2−3 minutes, or till golden brown. Remove from skillet, cut in half diagonally and serve with additional bbq sauce.

 

A&W Chili Dogs

1 Sabrett brand 2 ounce beef frankfurter (7½" long)

1 regular hot dog roll

3 Tablespoons A&W Coney Island Sauce (see recipe below)

1 Tablespoon chopped white onion

1/2 Tablespoon Kraft shredded mild cheddar cheese (optional)

A&W Coney Island Chili Dog Sauce

1 pound ground chuck

1 six ounce can Hunts tomato paste

1 Cup water

1 Tablespoon sugar

1 Tablespoon prepared yellow mustard

1 Tablespoon dried, minced onion

2 teaspoons chili powder

1 teaspoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon celery seed

1/2 teaspoon ground cumin (heaping)

1/4 teaspoon ground black pepper

Making the Chili Dog Sauce:

1. In a 2 qt. saucepan, brown the ground chuck, breaking into very small

pieces. Salt and pepper lightly while cooking. Do not drain the fat.

2. Add the remaining ingredients. Simmer, uncovered, 30−45 minutes until it

thickens. Stir occasionally.

3. Allow to cool, cover, and refrigerate until "Dog−Time". You'll be

microwaving what you need later.

Cooking your A&W Chili Dog

1. Bring a 2 qt. saucepan of water to a rolling boil.

2. Remove the saucepan from the heat, and add the desired number of

frankfurters to the water. Cover and let sit about 10 minutes.

3. After the franks are done, microwave the chili dog sauce until steaming.

(Only microwave what you need, save the rest) Then microwave each hot dog

roll 10 seconds....just enough to warm.

4. Remove the cooked franks with tongs, and place on the microwaved hot dog

roll.

5. Add about 3 Tablespoons of your prepared A&W chili dog sauce, and the

chopped onion. Grated cheddar cheese is optional.

Ingredients:

2 pounds medium shrimp

1 shot tequila

1 jicama, chopped

1 bunch of cilantro, chopped

1 yellow onion, chopped

1/2 cup vegetable oil

juice of 1 lime

Directions:

Boil the shrimp, then cool and peel. Mix the other ingredients into a marinade and pour into a zip lock bag with the cooled and peeled shrimp, chill for 30 minutes.

Ingredients:

4 Catfish Filets

Cheez It Crackers

Whole Milk

Directions:

Preheat oven to 350. Crush a half box of Cheez-its into fine crumbs. Rinse filets, dip in milk and coat with Cheeze-ts crumbs. Place filets on baking sheet in oven for about 10-12 minutes at 350 or until flaky. Don't overcook.

Total Prep and Cook Time: About 25 Minutes

Chocolate Pie

Ingredients:

1/2 stick butter

1 1/2 cups sugar

3 tablespoons cocoa

1/2 cup pecans

2 eggs, slightly beaten

1 teaspoon vanilla

1 teaspoon flour

1/2 cup evaporated milk

1 9 inch pie crust

Directions

Preheat oven to 400 degrees. Melt the butter in a large bowl. Add the next 7 ingredients, mixing throughly. Pour the mixture into the piecrust. Bake for 10 minutes at 400 degrees. Reduce oven temperature to 325 and bake for an additional 30 minutes!

Veggie Lasagna

Ingredients:

6 lasagna noodles, cooked

15 oz. frozen, chopped spinach

1/2 cup chopped onion

1 teaspoon oil

1 cup carrots,grated

2 cups fresh mushrooms, sliced

1 can (15 oz) tomato sauce

1 can (6 oz) tomato paste

1/2 cup pited ripe olives

1 1/2 teaspoon oregano

2 cups cottage cheese, strained

1 pound monterey jack cheese, sliced

1/4 cup parmesan cheese

Directions:

Prepare spinach according to package directions. Drain. Meanwhile, saute onions in oil until soft. Add carrots and mushrooms; cook until crisp. Stir in tomato sauce, tomato paste, olives and oregano. Butter or grease a 13x9x2 casserole pan. Layer in one-half each of noodles, cottage cheese, spinach, sauce mixture, and 1/2 of the cheese slices. Repeart. Sprinkle with Parmesan cheese and bake for 30 mins

Fantastic Fish Cakes

Ingredients:

4 cups fish fillets, cubed

2 eggs

1 cup italian bread crumbs

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon worcestershire

1 teaspoon dry mustard

1/4 cup mayonnaise

1/4 cup peanut or vegetable oil

Directions:

Mix the eggs with the breadcrumbs, salt, pepper, Worcestershire, mustard and mayonnaise. Fold in the fish and mold into cakes.

Fry in hot oil in a frying pan for about 5 minutes of each side. They should be browned, but not dried or soggy.

Fruit Stuffed Pork Chops

Ingredients:

6, one inch pork chops

1 cup chopped pineapple

1 teaspoon curry powder

Directions:

Cut a pocket into each pork chop. Mix the chopped pineapple and curry; stuff each pork chop with fruit mixture and bake for 1 hour, turning once.

Total Prep and Cook Time: About 60 Minutes

 

Breakfast Casserole

Ingredients:

1 pound sausage

Vegetable spray

1 large can Grands biscuits

1/2 cup cheddar cheese, shredded

5 eggs

Salt and Pepper

Tabasco

1 tomato chopped

1 cup chopped mushrooms

Directions:

Brown the sausage in a skillet. Coat a pan with vegetable spray and press half the can of biscuits flat inthe bottom. Sprinkle the cheese over the biscuits, drain the sausage and cover the cheese evenly with sausage, tomatos and mushrooms. Whip the eggs and pour over sausage. Salt and Pepper to taste, and add a few dashes of tabasco. Cover with the remaining biscuits. Cook at 375 for 25-30 minutes.

Total Prep and Cook Time: About 45 Minutes

Ravioli and Sauage

Ingredients:

1/2 pound sweet italian sausage

2 jars chunky spaghetti sauce

1 package 14 0z. frozen cheese filled ravioli-cooked and drained

Parmesan cheese

Directions:

In a skillet cook sausage on medium to high heat until browned. Stir in spaghetti sauce and heat to boiling. Add ravioli and simmer for 20 mins.

Beef Stir Fry

Ingredients:

2 pounds of sliced thinly steak

1 tablespoon salt

1/2 tablespoon black pepper

1/4 cup lime juice

1 tablespoon sugar

1/4 cup white wine

2 tablespoons sweet and tangy sauce

1 tablespoon ginger, chopped

1 clove garlic, minced

2 tablespoons oil

1 cat, cut in strips

1 red bell pepper, cut in strips

1 tablespoon cornstarch

1 cup water

cooked white or wild rice

Directions:

Salt and pepper the meat. Combine the lime juice, sugar, white wine, sweet and tangy sauce, ginger and garlic in a bowl and set aside. In a large iron skillet or wok heat the oil and brown the meat for about 4-5 minutes. Add the vegetables and stir for another 2-3 minutes. Then, add the lime juice mixture and stir until it boils.  Mix the cornstarch and water and add it to the skillet, stirring constantly, and let it boil again. Serve over the rice.

Southern Brownies

Ingredients:

1/2 cup melted Crisco shortening

2 eggs

1 cup sugar

1/2 teaspoon salt

1/2 cup flour

1/4 cup + 1 Tablespoon Hershey's Coco

1 teaspoon vanilla

1 cup chopped nuts (optional)

Directions:

Melt shortening over medium heat. Set aside to cool. Beat eggs in large mixing bowl, sift dry ingredients(except nuts) into eggs, stir well. Pour cooled shortening into mixture and blend, add vanilla and nuts. Bake in shallow 10x10 pan for 25-30 minutes at 325 degrees

Garlic and Herb Chicken

Ingredients:

4 boneless chicken breasts

6 tablespoons salted butter

2 teaspoons lemon juice

1/2 teaspoon salt

1/4 teaspoon pepper

3 Tablespoons garlic marinade of your choice

1/4 pound mushrooms, sliced

1/2 cup white wine

Directions:

Roll the chicken breasts flat. Melt 4 tablespoons of the butter with the lemon juice, garlic marinade, salt and pepper. Broil the breasts 6-8 minutes on each side, basting with the sauce. Saute the mushrooms in 2 tablespoons of butter, add the wine and cook down slowly. When the breasts are done, remove to a hot platter and pour the roasting pan drippings into the mushroom blend, stirring to combine. Simmer for 2-3 minutes. Pour the combined drippings and mushrooms over the chicken breasts. Serve.

Texas Chili

Ingredients:

2 pounds ground beef

1 1/4 cups vegetable oil

1 cup onion, chopped

2 garlic cloves, minced

1 green pepper, cut

3 tablespoons chili powder

2 teaspoons sugar

3 1/2 cups canned whole tomatoes

1 cup tomato sauce

1 cup water

1/2 teaspoon salt

1 tablespoon flour (optional)

2 tablespoons (optional)

2 cups kidney beans

Mozarella or Cheddar for topping (optional)

Directions:

In a large skillet, brown the ground beef in the vegetable oil. Drain off most of the fat. Add the onions, garlic and green pepper to the skillet and saute 5 minutes, stirring constantly. Add the chili powder, sugar, tomatoes, tomato sauce, water and salt. If a thicker chili is desired, stir in 1 tablespoon flour mixed with 2 tablespoons water. Turn heat down and simmer for 30 minutes. Add the beans, stirring to mix them in and let simmer for another 5-10 minutes. Serve topped with cheese if desired.

Sausage Waffles

Ingredients:

1/2 pound pork sausage

1/2 cup water

2 cups flour

1 tablespoon baking soda

1/2 teaspoon salt

1 tablespoon sugar

2 eggs

2 cups milk

1/2 cup melted butter

Directions:

Brown the sausage in a skillet with water. Drain and blot dry with paper towels and set aside. In a mixing bowl, combine flour, soda, salt and sugar. Add eggs, milk and butter and blend. Now add the sausage and mix throughly. Bake in a waffle iron until golden brown.

Total Prep and Cook Time: About 20 Minutes

Helen Byrd's Sloppy Joe Dip

Ingredients:

1 package of hamburger meat

1 8 0z can of Philadelphia cream cheese

1 can Hunts sloppy joe sauce

Directions:

Brown the hamburger and cut the cream cheese into small chunks into hamburger. After it melts then pour in can of Mamwich sauce. Let it simmer for a few minutes and and stir every once in a while. Grab some tasty corn chips and dip away!

Chicken Fried Steak

Ingredients:

2 pounds steak (about 4 steaks)

1 egg, beaten

Salt & pepper to taste

1/2 cup all purpose flour

vegetable oil

Directions:

Dip each steak in beaten egg, then a mixture of salt, pepper and flour. Fry each steak in vegetable oil until browned.

Total Prep and Cook Time: About 30 Minutes

Baked Stuffed Tomatoes

Ingredients:

8 good sized tomatoes

1/2 stick butter

1 large green onion top, chopped

1 cup ground beef

2 cups bread, softened in milk

1 egg, beaten

Salt and pepper

Parmesan cheese

Directions:

Preheat oven to 350 degrees

Scoop the stem and inside pulp (save the pulp) from the tomatoes and turn upside down on paper towels to drain. In a skillet, saute the onion top in butter until browned. Add the beef and tomato pulp to the onion and butter and cook on medium until it is not runny.

Squeeze the milk from the bread, add the egg, salt and pepper to the bread and mix well. Then add the meat and tomato mixture. Cook until it is firm. Stuff the tomato shells with with this dressing and sprinkle tops with parmesan cheese. Bake at 350 for about 15 mintues

Karen's Spicy Taco Salad

Ingredients:

1 lb ground round sautéed in a skillet

2 packets of taco seasoning - added to meat  

Cook as directed

Then add onions and green diced chilies

1 white onion diced

1 jar favorite hot salsa

2 bags lettuce

1 can chilies

1 bag shredded cheddar

1 jar of jalapeno slices

1 large bag of Tortilla chips

1 pint sour cream

Directions:

Pour a large portion of chips and lettuce in a BIG mixing bowl, add a portion of sautéed meat to the bowl and mix.  Add some salsa like you would salad dressing, spoon out into bowls and top off with jalapenos and sour cream and cheddar cheese!  YUM!

JC's Burrito Bake

Ingredients:

1 pound ground beef

1 can (16oz) refried beans

1 cup biscuit baking mix

1/4 water

1 cup thick salsa

1 1/2 cups shredded cheddar cheese

1 avocado sliced (optional)

Sour cream (optional)

Directions:

Preheat oven to 375 degrees

In a large skillet, brown the ground beef. In a large bowl, mix the beans, baking mix and water very well. Spread the mixture in the bottom, and half way up the sides of a greased 10 inch pie plate. Add the browned beef, salsa, cheese, and avocado. Bake for 30 minutes.

Add a spoon full of sour cream to each serving if desired.

Rene's Easy Chicken Parmesan.

Ingredients:

1 jar spaghetti sauce

6 TBSP. Parmesan cheese

6 chicken breasts

1 ½ cups shredded Mozzarella cheese

Directions:

In 13x9 pan, combine 4 TBSP. Parmesan cheese with spaghetti sauce.  Add chicken, turning to coat.  Cover with foil, bake 30 minutes @ 375.

Uncover, top with remaining Parmesan cheese & Mozzarella cheese.  Bake 5 minutes.  Serve over pasta.

Cale's Famous Chicken Noodle Soup.

Ingredients:

8 CANS OF CHICKEN BROTH

3 CANS OF CREAM OF CHICKEN SOUP

3 CANS OF SHREDDED CHICKEN

1 BAG OF NOODLES

SALT AND PEPPER

Directions:

BRING BROTH TO A BOIL AND ADD CREAM OF CHICKEN SOUP.BRING TO A BOIL AND STIR UNTIL DISSOLVED.  ADD NOODLES AND SHREDDED CHICKEN AND BOIL TIL NOODLES ARE TENDER.STIR FREQUENTLY TO MAKE SURE THE NOODLES DON’T STICK!

Down Home Bubba Burgers

Ingredients:

 2 pounds Groud Beef

2 Tablespoons Mesquite Grill seasoning

1 package cheese slices

1 large onion, thinly sliced

2 tomatos, thinly sliced

Salt and Pepper

Directions:

Mix the ground beef with the Mesquite Grill Seasoning and shape into 8 patties--a little bit thinner, but larger than usual. On top of four patties, place a layer of cheese, onion and tomato. Cover those patties with the other 4 patties and seal the edges. Season with Salt and Pepper to taste. Grill over low heat until done, turning regularly. Put it on your favorite bun, sit back and enjoy the fruits of your labor!
